Everyone loves ofada rice! Okay not everyone, but you get the drift. Here are the health benefits, recipe and how to cook ofada rice and sauce.
Some like Ofada rice for the unique taste of the unpolished rice while others for the combination of meats and peppers in the sauce (Ayamase) which gives it a complex flavour that leaves them wanting more. Ofada rice and sauce (ayamase) is easy to prepare, not expensive as you can work with any budget and doesn’t take long to prepare.

INGREDIENTS:
OFADA RICE:
3 cups ofada rice
6 cups water
1 tsp. Salt
1 tsp. vegetable oil
Chopped onions (optional)
OFADA SAUCE:
1/4 cup palm oil
1 tbsp. Iru (Locust Beans)
1 kg assorted meat (Shaki, Kpomo, Liver) – already cooked and chopped
Smoked fish
600 g cooked chicken
1 cup chicken broth
1 tsp. salt
1 seasoning cube
1 tbsp. crayfish
1 medium onion
Green tomatoes
Green bell pepper
Green habanero Pepper (tatashe)
OFADA RICE:
- Rinse rice throughly and severally as as Ofada rice can be dirty and stony.
- Add to pot of boiling water.
- Perboil
- Add salt and oil.
- Cook for 35 minutes or until it’s ready.
OFADA SAUCE:
- Blend the peppers together; green tomatoes, peppers and onion. Place in a pot and boil for 15 minutes
- Bleach palm oil for 10 minutes; that means leaving it on fire till it is close to vegetable oil. Allow to cool a bit after bleaching.
- Chop onions into bits
- Add chopped onion, saute, and the pepper mixture.
- Add salt, iru (locust beans), assorted meat and crayfish. Cover and allow to cook.
- Leave it on fire till oil floats to the top.
- Add chicken stock, taste and add seasoning cube if necessary. Now you may add the cooked chicken.
- Simmer on fire for 5 more minutes
- Serve!
